Faithful Fitness Friday {Texas Caviar Recipe}

Today, I embarked on a new journey and diet/exercise plan that has a bit of faith mixed in. It’s called The Daniel Plan, and this plan focuses on 5 F’s: faith, food, fitness, focus and friends. So my friends, I thought I would share with you one of my favorite recipes that fits within this plan, Texas Caviar.
Now before we get started, I want to let you know that there are hundreds of variations of this recipe online. If you type in “Texas Caviar” into Pinterest, you’ll be scrolling for awhile until you reach the end. So you know that everyone has their own unique twists, and you may want to consult a few of those as well as the one I’m about to share to see what makes the perfect dish for you.
My twist on this recipe is that all of the ingredients that are included are found in the “good foods” list for The Daniel Plan.

Directions
- Chop all of the vegetables, cilantro and garlic into small bite-sized pieces and place in large bowl.
- Drain can of black beans and black eyed peas and mix in with vegetables.
- Partially drain can of southwestern style corn and add to other ingredients.
- Add extra virgin olive oil and white wine vinegar to small bowl. Add the ground black pepper and whisk together with a spoon. Drizzle this over the top of the ingredients in the large bowl and mix until well coated.
- Serve with pita bread, over a salad or on it’s own.
- Enjoy!
